Prime is usually sold to higher end resturants, who pay a prime price for it.
Choice is still a good cut of meat, it just doesn't have as much marbling that prime does.
You can find choice that is tender, but you can also find prime that is tough.
Most of the time, you can look at meat and tell if it is a good cut or not, especially a ribeye.
I get my steaks from Market Basket, at the meat market section. If you buy from the prewrapped
cooler, they don't look as good.
