A Boston Butt boiled for three hours, or until the bone is ejected. I use one half cup of crawfish boil for the first 1.5 hours per Butt.
Then add a second 1.5 cups of boil for the second 1.5 hours. Keep the meat covered with water and on a little bubble/roll.
Hard hard is it to boil water?
For 25 people, I would do two.
