Goose legs and wings....
 
Has anyone ever grilled goose legs and wings. I'm going through the freezer and I forgot I have bags of these guys. Like 7 bags with 5 legs and wings in each. So I'm thinking of boiling them down for a while in some seasonings. Probly boil them for about 2-4 hrs or until tender. Then take them out and marinate them up and sear them on the grill to get that taste. What yall think? Time to start emptying the freezers out and make space for the coming killing season ya know.

Never tried them on the grill but I have fried them and they were great!

I wouldn't boil them. You can brine them by soaking them in 1/2 gallon of water with 1/4 cup of salt dissolved in it for 12-20 hours then grill/smoke them.

250 with a wood fire for 6 hours makes everything good. Ok maybe not bear meat. Hell 10 hours didn't help that stuff.
Never had goose wings but I bet they are great. Good luck and post pics :)

Not a lot of people keep the wings. They just cut the legs off. The wings have just as much meat as the legs. May take about 10seconds longer to do the wings but they are worth it. Just as tender and tasty as the legs are. Best piece of meat on the birds as far as I'm concerned. Made a Sauce Picante with some one time...

I would use those in a gravy or gumbo. There is nothing like a good goose gravy!

Yes goose gravy is amazing. I still have plenty of geese though. That's probly the next project for some of the birds. Got to get this freezer more on the empty side.

Legs and wings in brown gravy. Breasts marinated and bacon wrapped. Both are hard to beat.
