fruit vaccuming
 

I used to cook my fruit a little then put in zip bag and freeze. I have a vac. sealer and have peeled and quartered my pears and froze raw and tried a pie today and it came out good but the thing i find is a lot of juice comes out when vacuuming . I tried these today to see and was wondering if anybody tried this before. just vac. the whole pear and freeze and peel and seed when needed.

I haven't tried that, best way to save the juice is to lay the slices on pans with space in between, you can later with parchment paper. Throw the pans in the freezer for an hour or so, then vacuum seal. No juice squeezes out now

I froze the quarters in the bag first then vac. I used all the juice in the pie and it came out good . Just experimenting with the whole pears . Seems easier and should be ok. I'll defrost in a couple days and see. Those are the eating pears , i ain't touch the cooking pear tree yet but the eating pears i find are more tasty for a pie and i'm just trying to preserve them the best way.

Tried canning them? Yeah it's not as easy as freezing I know.

Tried canning stuff years ago,,,it rotted....I think on the peeled and quartered ones I should have cut the bag and released the vacuum before they defrosted. I'll try those whole ones in a day or two and see what they look like.

Freezing whole is more trouble than worth but works........I will peel and quarter and open to release vac.
