Spring time fishing on lake calcasieu
 


These little late fall cold fronts continue to keep fishing and catching up and down. One day you got em' and the next day it's a little tough. Catching really solid speckled trout can be good on an outgoing tide which tends to be in the late afternoon. Wayne Stickle and his boys took a trip to the lake with Capt. Paul Grindol and caught on the grill. They had a great time and really loved Redfish on the half shell back home. Thanks for the great picture and bring the left over's when you come back Wayne. Yum Yum

THIS WEEKS YUMMY RECIPE


ALVOCADO AND SHRIMP COCKTAIL
  • 2 avocados
  • Fresh lemon slices
  • 1 – Small chopped tomato
  • ½ cup chopped yellow bell pepper
  • 1-1/2 cups cooked, peeled baby shrimp
  • 3 tablespoons mayonnaise
  • 1 tablespoon heavy cream
  • Dash Tabasco
  • Dash white Worcestershire sauce
  • Salt and pepper to taste
  • Paprika
Halve avocados, remove stones, rub surface with lemon slice. Combine mayonnaise, cream, Tabasco, white Worcestershire sauce, vegetables, salt and pepper. Fold in cooled shrimp; spoon into avocados; sprinkle with paprika and chill. Serve chilled on bed of lettuce.

As we begin our new fishing season here at the lodge you will have some fresh fish for dinner. Try this great dish when you get home.



MICROWAVE TROUT & REDFISH
  • Cleaned fish filets
  • McCormick lemon Pepper
  • Butter
  • Favorite picante sauce
  • HR&G seasoning (call Pauline @ 888.762.3391) to get some.
Sprinkle lemon pepper and HR&G seasoning generously on filets. Dot filets with small pats of butter. Cover microwave safe dish with clear plastic wrap and place dish in microwave. Cook 2 minutes per filet on high until done. About 30 or 45 seconds before your fish is done spoon on a desired amount picante sauce and return to finish. You can add any of your favorite vegetables like shallots, bell pepper, mushrooms and etc. on top of your fish during the cooking process.



Have fun with this recipe. It’s a quick and healthy and you will enjoy it.
