Cajun Italian Meat Sauce
 
I came home this evening with a mission on my mind. Cajun/Italian Meat Sauce for eating over pasta. Linguine to be exact.
Browned 2.5 lbs of mild Italian sausage and three pounds of ground beef.
Saute'd the onions up just about right

For an extra little kick I added some of that Gator Blood Bloody Mary Mix to the onions before adding tha meat and sauce.

Of course there's other spices and seasonings in there. Gonna be gooood!

Looks good. I like a Cajun Italian meat sauce too. What I do is brown onions, bell peppers and celery then add a can of Mild Rotell. Kinda like the beginnings of a Courtillion but without the roux. Then I add 1 pound of the leanest ground meat I can find and 2 pounds of green onion sausage from Rouses. I cut the sausage into small pieces and brown the meat and sausage. Once the meat is nice and brown I skim as much oil as I can and add a jar of Ragu Garden style sauce. Cook that for a while and serve over noodles with a side of Garlic bread and Mexi-corn. Talk about good!

My father in law makes a sauce picaunte with deer ground meat, deer chunks of meat, deer sausage and smoked deer sausage, it's very good!

I picked up a fresh loaf for French bread today to make garlic bread for the Cajun/Italian Meat Sauce and Linguine for dinner tonight.
Got home and put the sauce to warm while the pasta was boiling and crushed 4 or 5 cloves of garlic and tossed it in a saucepan with a stick of butter and some Italian herbs. Let that simmer really low to get all garlicy and put it on some french bread then sprinkled parmesan cheese on top and into the oven to warm.

Plated with an ice cold Birra Moretti and a crisp salad on the side. Excellent meal!

Sig you ever try to roasting your garlic for garlic bread.

I cut a head in half, put the cut side up, sprinkle with EVOO, salt, and fresh cracked black pepper. Convection bake a t 325 for 30 minutes covered with a little piece of foil. Makes excellent garlic bread.
