Cinco De Mayo Eats
Yesterday was another busy day around the house for me so my wife did the cooking . I was ging to cok some crawfish etouffe but she had a better idea(well considering it was Cinco De Mayo)to make crawfish enchiladas which came out really good. American cheese cut at the deli, but I just toasted it and ate it for lunch. Sometimes a good sandwhich hits the spot better than a 5 star meal.

I hate to report this to you but as it turns out she used a canned sauce she bought at the store. She said that since it was something she decided to do sort of at the last minute she just grabbed a can while she was at the grocery.
All I can say is that it was still pretty darn good. If you want the recipe for the enchiladas I'll get it from her tonight. Just let me know. |
