I messed up last night

Thawed out some flounder and specks to cook up this week. Tuesday I blackened some flounder and last night fried some specks. Well, ran to the store to get a few things and saw Oak Grove Smokehouse Fish Fry for $0.79, grabbed four of em just because. Cooked up the fish and the fish looked great after coming out the grease but the only thing is that this particular brand of fish fry forgot one important thing - FLAVOR! Basically flour, never again will I not use Louisiana Fish Fry. I never ever use anything else, and now I know why:grinpimp:

I havent messed with fish fry in a long time. Usually just use flower seasoned well with Tony's. Dip in a couple of eggs mixed with a generous amount of Tony's first then the flour mix. Fry everything this way. Cant go wrong. After you get the feel for how much seasoning works for you its perfect everytime.

Yep

I like really seasoned corn meal like my grandma used to do it. Talk about good.

I tried some Slap Ya Momma fish fry the other day and will NEVER use it again. It was horrible. Also tried some "can't remember the brand" hush puppy mix that was so bad we threw them away.

here is my go to fish fry.
1 part AP flour
1 part masa flour
1/2 part corn flakes ( run thru food processor)
1/2 part instant potatoes.
cayanne
salt
black pepper
lemon pepper
onion powder
garlic powder
I mix yellow mustard , louisiana hot sauce and some tony's to dredge the fish in before breadding.

them oysters get corn meal for sure

The Oak Grove stuff was mainly flour, I like more corn meal myself. Corn meal with seasoning is great, but gotta pile on the lemon pepper

Very very interesting right there, may try that

Corn flakes are intersting too, for deer frying deer steak I run saltine crackers thru the food processor

I use the Zataran's "Southern Crispy" fry. Stuff is already seasoned well right out the bag, I dont add anything else.

I let the fish sit over night in milk with mustard mixed.

DUCKGOGETTER 11-17-2011 11:09 AM

Man ya'll making me hungry for fried fish

I like the "Zataran's Crispy Southern " fish fry but I found one similiar that I like better. It is called "Uncle Gilbert's" fish fry. Give it a try.

I'll mix Louisiana fish fry or Zatarains fish fry w/ Panko bread crumbs bout 1/2 and 1/2. This really works great when you are oven frying. (I'm cuttin' back on the fat and grease) They crisp up fine on a baking sheet w/ parchment paper sprayed w/ cooking spray.

i always use 1/2 cornmeal, 1/2 flour with some tony's... dip in buttermilk, batter, fry it up! comes out perfect every time!

May start doing this "oven frying" thing, I stink up the whole house for two days. I fry inside when its just two of us eating, and I could use a little less fats in my diet I suppose:)

Keywest18 11-17-2011 12:15 PM

i use half yellow cornmeal and half zatarans with LOTS of tonys and its perfect everytime. definitely gonna have to look into oven fryng
