redfish wraps
 
just about anything is good wrapped in bacon, here's another wrap that's easy and makes good appitizers. i got the recipe from Mike Anderson. rub olive oil on redfish filets and season( i just used Tony's), cut jalapeno or faro peppers in half longways and deseed, cut fish into 1"x3" pcs., put a pc. of fish in pepper 1/2 and wrap with 1/2 pc. of bacon, skewer with wet toothpick or put several on a skewer. cook on pit untill bacon is done. prolly about a gazillion variations to this, but it's a starting point! we like to eat a lot of fish and are always looking for different ways to cook without frying. this is a fairly healthy dish-----bacon's a health food, right?
