It is alot easier to crack the eggs first instead of boiling and peeling them. The trick is to reduce the heat on the gumbo to where it is not boiling right before you are ready to eat, if it is boiling it will break the eggs apart. Crack eggs into pot of unboiling gumbo and let sit for 5 minutes and you will have a perfect boiled egg without the trouble of peeling them. And also its hard to beat some good baked sweet potatoes with gumbo. Sweet potatoes are very prevalent where I live in south central Lousiana so i guess that is why we grew up with this instead of tater salad.

Tater salad with gumbo is good stuff. I agree with one comment. Take a fresh green cabbage and slice it into thin strips. Take a handfull of strips and put on top of your bowl of gumbo and rice. Pretty good I think

I like a cold glass of water, some Potato Salad and tub of butter with some crackers to eat with my poul doux and oyster gumbo. I do eat eggs in it.
