I really applaud you and everyone for releasing those huge sow trout. I kept a 8.5 pounder one time and it was really greasy when we ate it. The largest I've released was a 32" caught in lower laguna madre. Didn't have a scale but we thought she weighed over 10 lbs.

Big Trout are not greasy. They taste just like smaller ones. Just a lot thicker slabs. Don't have to do nothing special to cook, just hafta cook longer.
If it was greasy, you didn't cook it right.
